Auto racing done only at night, but with your headlights off. (but done during a full moon so its safe.)

During the closing ceremony they should have all the atheletes gather in the stadium and have a last man (or woman) standing contest.

Nice idea! Since the Chinese are the masters of class C explosives, can pyrotechnic technology be used?

That does remind me...Professional Wrestling! I'd bet on the Mexican contingent of Luchadores, and of course everyone would have to wear Lucha Libre-style masks.

In the real world, I've always been disappointed that the team tug of war was eliminated after the 1896 Olympics. Some of the Cold War showdowns would have been great.

In the spoof department, the Pelvic Powerlifting ad was well done. The sport has potential. <a href="http://www.youtube.com/watch?v=ktXuBOYLnjc">Seriously pixalated version here</a>.
